The Sauvignon Alto Adige DOC from Adler Winery is an elegant white wine that showcases the noble characteristics of this French-origin variety. Introduced to Alto Adige around a century ago, the grape has only recently been cultivated in the Valle Isarco. The region’s warm, frost-protected, and porphyry-rich soils of the lower Valle Isarco, combined with southeast exposure, lend this Sauvignon its distinctive complexity and finesse, making it one of the finest expressions among white wines in Alto Adige.
Soil and Altitude – The Perfect Balance
Grown at elevations between 450 and 750 meters, the Sauvignon vines benefit from optimal sun exposure and protection from the cold, thanks to the region’s unique climate. The hot, fertile, and very deep alluvial soils with porphyritic sediment enhance the wine’s mineral character and aromatic profile, creating a wine that is both vibrant and full of depth.
Thoughtful Vinification for Aromatic Purity
The Adler Winery’s vinification process is designed to retain the grape’s natural aromatics and freshness. Gentle processing and crushing of the grapes are followed by controlled-temperature fermentation, capturing the intense flavors and scents. The wine then ages on fine lees in stainless steel tanks, a technique that adds texture and complexity while maintaining the bright acidity, as no malolactic fermentation is conducted.
