The Iconic Schiava Variety
The Schiava Alto Adige DOC by Adler Winery embodies the essence of South Tyrolean winemaking. As the region’s most typical and widely grown grape variety, Schiava enjoys a special place in the heart of Alto Adige. However, it is rarely cultivated in the Valle Isarco. The vineyards at the mouth of the valley, just north of Bolzano, offer the perfect conditions for this variety, bringing out its renowned elegance and the distinctive fruity notes that make Schiava a celebrated red wine of Alto Adige-Südtirol.
Optimal Growing Conditions
Planted at altitudes ranging from 400 to 700 meters, Schiava vines thrive in the hot and fertile climate, which is complemented by very deep alluvial soils rich in porphyritic sediment. This unique terroir enhances the grape’s natural character, allowing for a wine that is both elegant and expressive, with a harmonious balance of freshness and fruitiness.
Traditional Vinification Methods
The Adler Winery honors tradition in its vinification process, starting with a classic maceration on the skins under controlled temperature conditions. Malolactic fermentation follows, softening the wine’s acidity and contributing to its smooth texture. Finally, the wine is aged on fine lees in stainless steel vats, a step that preserves its freshness while adding depth to its flavors.
